Ingredients

  • 2 pieces chipotle peppers in adobo sauce
  • 2 tablespoons adobo sauce from chipotle can
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 3 pieces garlic cloves
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons water

Directions

Step 1

Add the chipotle peppers, adobo sauce, olive oil, lime juice, and honey to a blender or food processor.

Step 2

Peel the garlic cloves and add them to the blender.

Step 3

Sprinkle in the ground cumin, smoked paprika, dried oregano, salt, and black pepper.

Step 4

Add water to the blender to help thin out the marinade for better consistency.

Step 5

Blend all ingredients together until smooth, scraping down the sides as necessary to ensure an even mix.

Step 6

Taste the marinade and adjust seasoning if needed (add more lime juice for acidity, honey for sweetness, or adobo sauce for heat).

Step 7

Pour the marinade into a bowl or resealable plastic bag, and submerge your desired protein or veggies. Let marinate in the fridge for at least 1 hour, or up to 24 hours for more intense flavor.

Step 8

Discard any excess marinade after use and cook your marinated food as desired.
