Ingredients

  • 12 pieces Tiger shrimp
  • 2 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 0.5 teaspoon Ground cumin
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 pieces Chipotle peppers in adobo sauce
  • 0.5 cup Mayonnaise
  • 0.25 cup Sour cream
  • 1 tablespoon Lime juice
  • 1 teaspoon Honey
  • 2 tablespoons Cilantro
  • 4 pieces Lime wedges

Directions

Step 1

Rinse and pat dry the tiger shrimp. Peel and devein the shrimp, leaving the tails on for presentation.

Step 2

In a small bowl, whisk together olive oil, garlic powder, paprika, ground cumin, salt, and black pepper.

Step 3

Toss the shrimp in the seasoning mixture, making sure they're evenly coated. Set aside to marinate for 10 minutes.

Step 4

Preheat your grill or grill pan to medium-high heat.

Step 5

While the shrimp marinates, prepare the chipotle lime dip: In a blender or food processor, combine chipotle peppers in adobo, mayonnaise, sour cream, lime juice, honey, and cilantro. Blend until smooth and creamy.

Step 6

Transfer the dip to a serving bowl and set aside in the refrigerator until ready to serve.

Step 7

Grill the shrimp for 2-3 minutes on each side, or until pink and slightly charred. Be careful not to overcook.

Step 8

Remove the shrimp from the grill and transfer to a serving platter. Serve hot with the chilled chipotle lime dip and lime wedges on the side for squeezing over the shrimp.
