Ingredients

  • 1 lb ground beef (80/20 blend)
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp chipotle peppers in adobo sauce
  • 2 tbsp honey
  • 3 tbsp BBQ sauce
  • 4 slices bacon
  • 2 oz gorgonzola cheese
  • 2 hamburger buns
  • 1 tbsp butter (optional, for toasting the buns)
  • 2 leaves lettuce
  • 1 small, sliced tomato
  • 2 slices red onion

Directions

Step 1

Preheat a skillet or grill to medium-high heat.

Step 2

In a small bowl, mix the chipotle peppers in adobo sauce, honey, and BBQ sauce to create the chipotle honey BBQ sauce. Set aside.

Step 3

Season the ground beef with salt and black pepper. Divide it into two equal portions and shape them into burger patties, about 3/4-inch thick.

Step 4

Cook the bacon in a skillet over medium heat until crispy. Remove the bacon and set it on a paper towel to drain.

Step 5

In the same skillet or on the grill, cook the burger patties for 4-5 minutes on each side for medium, or adjust cooking time based on your desired doneness.

Step 6

During the last minute of cooking, spoon about 1 tablespoon of the chipotle honey BBQ sauce onto each patty, and place about 1 ounce of gorgonzola cheese on top. Cover with a lid or aluminum foil to allow the cheese to melt slightly.

Step 7

If desired, lightly butter the hamburger buns and toast them on the grill or in a skillet until golden brown.

Step 8

Assemble the burgers: Place a leaf of lettuce on the bottom half of each toasted bun, followed by a burger patty, two slices of crispy bacon, a slice of tomato, and a slice of red onion. Top with the other half of the bun.

Step 9

Serve immediately with your favorite side dish, such as fries or coleslaw.
