Ingredients

  • 1 lb Raw shrimp (peeled and deveined)
  • 2 pieces Chipotle peppers in adobo sauce
  • 2 tbsp Honey
  • 1 tbsp Lime juice (freshly squeezed)
  • 2 cloves Garlic (minced)
  • 1 tbsp Olive oil
  • 0.5 tsp Salt
  • 0.25 tsp Ground black pepper
  • 2 tbsp Chopped cilantro (for garnish)
  • 4 pieces Lime wedges (for serving)

Directions

Step 1

Rinse and pat dry the raw shrimp. If not already done, peel and devein the shrimp, leaving the tails on for presentation if desired.

Step 2

In a small blender or food processor, add the chipotle peppers, honey, lime juice, minced garlic, olive oil, salt, and ground black pepper. Blend until the mixture forms a smooth glaze.

Step 3

Place the shrimp in a bowl and pour about half of the chipotle glaze over them. Toss to coat the shrimp evenly. Reserve the remaining glaze for later.

Preheat a large skillet or grill pan over medium-high heat. Lightly oil the pan to prevent sticking.

Add the shrimp to the pan in a single layer. Cook for 2-3 minutes on each side, or until the shrimp turn pink and opaque. Do not overcook.
