Ingredients

  • 4 lbs Whole chicken
  • 2 lbs Sweet potatoes
  • 2 pieces Chipotle peppers in adobo sauce
  • 2 tablespoons Adobo sauce
  • 2 tablespoons Honey
  • 3 tablespoons Olive oil
  • 4 cloves Garlic cloves, minced
  • 1 teaspoon Ground cumin
  • 1 teaspoon Smoked paprika
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Lime juice
  • 2 tablespoons Fresh cilantro, chopped

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Rinse and pat dry the whole chicken with paper towels. Set aside.

Step 3

Peel and chop the sweet potatoes into 1-inch cubes and toss them with 1 tablespoon of olive oil, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Spread the sweet potatoes evenly in a large roasting pan.
