Ingredients

  • 12 ounces fresh cranberries
  • 1 cup orange juice
  • 0.75 cup granulated sugar
  • 2 tablespoons honey
  • 1 pepper chipotle peppers in adobo sauce
  • 1 teaspoon adobo sauce
  • 0.25 teaspoon ground cinnamon
  • 0.25 teaspoon ground allspice
  • 0.25 teaspoon salt
  • 0.5 cup water

Directions

Step 1

Rinse the cranberries thoroughly under cold running water and discard any that are bruised or damaged.

Step 2

In a medium saucepan, combine the orange juice, water, and sugar. Stir over medium heat until the sugar completely dissolves, about 2-3 minutes.

Step 3

Add the cranberries to the saucepan and bring the mixture to a gentle boil. Cook for 5-7 minutes, stirring occasionally, until the cranberries begin to pop and soften.

Step 4

Chop one chipotle pepper finely and add it to the saucepan, along with 1 teaspoon of adobo sauce. Stir well to incorporate.

Step 5

Add the honey, ground cinnamon, ground allspice, and salt. Reduce the heat to low and simmer for an additional 5 minutes, stirring frequently, until the sauce thickens to your desired consistency.

Step 6

Remove from heat and let the sauce cool slightly. For a chunkier sauce, leave as is. For a smoother texture or to turn it into a 'butter', blend the mixture in a food processor or with an immersion blender until smooth.

Step 7

Transfer the sauce to a serving dish or airtight container. Let it cool completely, then refrigerate for at least 2 hours to allow the flavors to meld together.

Step 8

Serve chilled or at room temperature alongside roasted meats, spread on toast, or as a dip for cheese platters.
