  • 1 cup Rice (long-grain or basmati)
  • 2 cups Water
  • 0.25 cup Cilantro, chopped
  • 2 tbsp Lime juice
  • 1 cup Black beans, drained and rinsed
  • 1 cup Corn kernels
  • 1 cup Cherry tomatoes, halved
  • 1 Avocado, diced
  • 1 cup Shredded lettuce
  • 0.5 cup Shredded cheese (cheddar or Mexican blend)
  • 0.25 cup Sour cream or Greek yogurt
  • 0.25 cup Salsa or hot sauce

Directions

Step 1

In a bowl, mix together the chipotle peppers, olive oil, minced garlic, cumin, smoked paprika, salt, and black pepper to form a marinade.

Add the chicken thighs to the marinade, ensuring they are evenly coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
