Ingredients

  • 1 lb Chicken breasts (boneless, skinless)
  • 2 tbsp Olive oil
  • 1 Yellow onion (diced)
  • 3 Garlic cloves (minced)
  • 1 Red bell pepper (diced)
  • 2 Chipotle peppers in adobo sauce (chopped)
  • 2 tbsp Adobo sauce
  • 1 can Crushed tomatoes (14 oz can)
  • 2 cups Chicken broth
  • 1 can Black beans (15 oz can, rinsed and drained)
  • 1 can Kidney beans (15 oz can, rinsed and drained)
  • 2 tsp Chili powder
  • 1.5 tsp Ground cumin
  • 1 tsp Smoked paprika
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.25 cup Fresh cilantro (chopped, for garnish)
  • 4 Lime wedges (for serving)
  • 0 Optional: shredded cheese, sour cream, diced avocado (for topping)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Season the chicken breasts with a pinch of salt and pepper, then add them to the pot. Sear for about 4-5 minutes per side until golden brown. Remove the chicken and set aside (it will finish cooking later).

In the same pot, add the diced onion and cook for 3-4 minutes until softened.

Stir in the minced garlic and diced red bell pepper, cooking for another 2-3 minutes until fragrant.

Bring the chicken breasts back to the pot, submerging them in the liquid. Cover the pot and simmer over low heat for 20 minutes.

Remove the chicken breasts and shred them using two forks. Return the shredded chicken to the pot.

Add the black beans and kidney beans, stirring to combine. Simmer uncovered for another 10 minutes to thicken the chili and meld the flavors.
