Ingredients

  • 1 pound Ribeye steak
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 large Yellow onion
  • 1 medium Green bell pepper
  • 8 slices Provolone cheese
  • 2 whole Chipotle peppers in adobo sauce
  • 0.5 cup Mayonnaise
  • 4 whole Hoagie rolls
  • 0.5 teaspoon Garlic powder

Directions

Step 1

Place the ribeye steak in the freezer for 15-20 minutes to firm up slightly, making it easier to thinly slice.

Step 2

While the steak is chilling, prepare the chipotle mayo. In a blender or food processor, combine the chipotle peppers, adobo sauce, and mayonnaise. Blend until smooth and set aside.

Step 3

Thinly slice the yellow onion and green bell pepper into strips. Set aside.

Step 4

Remove the steak from the freezer and slice it as thinly as possible against the grain. Season the steak slices with salt, black pepper, and garlic powder.

Step 5

Heat a large skillet or griddle over medium heat. Add 1 tablespoon of olive oil and sauté the onions and peppers until softened and slightly caramelized, about 5-7 minutes. Remove from the skillet and set aside.
