  • 2 cups cooked white rice
  • 0.25 cup cilantro, chopped
  • 1 piece lime, juiced
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded cheddar cheese
  • 2 cups romaine lettuce, shredded
  • 1 cup guacamole
  • 0.5 cup sour cream
  • 0.5 cup salsa

Directions

Step 1

Begin by marinating the chicken. In a small bowl, mix the chipotle peppers in adobo sauce, olive oil, garlic powder, cumin powder, salt, and black pepper.

Place the chicken breasts in a large ziplock bag and pour the marinade over them. Seal the bag and marinate in the refrigerator for at least 15 minutes.

Heat a grill pan or skillet over medium-high heat. Cook the marinated chicken breasts for about 6-7 minutes on each side or until fully cooked through. Remove from heat and let rest for a few minutes before slicing into thin strips.
