  • 2 pieces (finely chopped) Chipotle peppers in adobo sauce
  • 1 tbsp Adobo sauce from chipotle can
  • 2 tbsp (freshly squeezed) Lime juice
  • 1 tbsp Olive oil
  • 2 cloves (minced) Garlic
  • 0.5 tsp Ground cumin
  • 0.5 tsp (or to taste) Salt
  • 0.25 tsp (or to taste) Black pepper
  • 1 small (finely diced, optional) Jalapeño

Directions

Step 1

In a large mixing bowl, combine the drained and rinsed black beans and corn kernels.

Add the quartered cherry tomatoes, diced red onion, and chopped cilantro to the bowl.
