  • 2 tablespoons Tomato paste
  • 1 14.5-ounce can Canned diced tomatoes
  • 3 15-ounce cans Canned black beans, drained and rinsed
  • 3 cups Vegetable broth
  • 1 cup Corn kernels (fresh, frozen, or canned)
  • 1 teaspoon Salt
  • 0.5 teaspoon Freshly ground black pepper
  • 1 tablespoon Lime juice
  • 3 tablespoons Fresh cilantro, chopped (optional for garnish)
  • 0 Sour cream (optional for serving)
  • 0 Shredded cheese (optional for serving)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.
