Ingredients

  • 1 lb Ground beef
  • 2 tbsp Chipotle peppers in adobo sauce (minced)
  • 1 small Onion (finely chopped)
  • 3 cloves Garlic (minced)
  • 1 tsp Ground cumin
  • 1 tsp Chili powder
  • 1 tsp Salt
  • 1 cup Black beans (cooked or canned, drained and rinsed)
  • 1 cup Corn kernels (fresh or frozen)
  • 8 Flour tortillas (medium size)
  • 2 cups Enchilada sauce (red or chipotle-flavored)
  • 2 cups Shredded cheddar or Monterey Jack cheese
  • 2 tbsp Fresh cilantro (chopped, optional for garnish)
  • 0.5 cup Sour cream (for serving, optional)
  • 1 tbsp Vegetable oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Heat the vegetable oil in a large skillet over medium-high heat.

Add the chopped onion and minced garlic to the skillet and sauté until the onion is translucent, about 2-3 minutes.

Add the ground beef to the skillet and cook until browned, breaking it up with a wooden spoon as it cooks, approximately 5-7 minutes.
