  • 4 large Russet potatoes
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 3 tablespoons Unsalted butter
  • 1 cup Sour cream
  • 2 peppers Chipotle peppers in adobo sauce
  • 1 cup Cheddar cheese, shredded
  • 2 stalks Green onions, thinly sliced
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Paprika (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash and scrub the potatoes thoroughly. Pat them dry with a paper towel.

Step 3

Pierce each potato several times with a fork and rub them with olive oil. Sprinkle with 1/2 teaspoon of salt.

Step 4

Place the potatoes directly on the oven rack or on a baking sheet. Bake for 50–60 minutes, or until fork-tender.

While the potatoes are baking, finely chop the chipotle peppers and set them aside.

Remove the baked potatoes from the oven and allow them to cool for 10 minutes, or until they are easy to handle.
