Ingredients

  • 2 cups Fresh corn kernels (or frozen, thawed)
  • 0.5 cup Red onion, finely diced
  • 1 whole Jalapeño pepper, finely minced
  • 1 teaspoon Chipotle chili in adobo sauce, finely chopped
  • 0.5 cup Red bell pepper, finely diced
  • 2 tablespoons Fresh cilantro, finely chopped
  • 2 tablespoons Fresh lime juice
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper

Directions

Step 1

If using fresh corn: Remove the husks and silk from the ears, then slice off the kernels using a sharp knife. Quickly blanch the corn kernels in boiling water for 2-3 minutes, then drain and let them cool. If using frozen corn, simply thaw and pat dry.

Step 2

In a medium-sized mixing bowl, combine the corn kernels, red onion, jalapeño, red bell pepper, and chopped chipotle chili.

Step 3

Add the fresh cilantro, lime juice, salt, and black pepper to the bowl.

Step 4

Mix everything thoroughly until all ingredients are evenly combined and coated in lime juice.

Step 5

Taste the salsa and adjust seasoning by adding more lime juice, salt, or chipotle chili for extra heat, if desired.

Step 6

Let the salsa sit for at least 15 minutes before serving to allow the flavors to meld together.

Step 7

Serve chilled or at room temperature with tortilla chips, or use as a topping for tacos, burrito bowls, or grilled dishes.
