Ingredients

  • 250 g All-purpose flour
  • 90 g Butter (unsalted, softened)
  • 40 g Powdered sugar
  • 60 ml Water
  • 300 g Winter melon (peeled, grated, and cooked)
  • 100 g Sugar
  • 25 g Glutinous rice flour
  • 1 tbsp Vegetable oil
  • 2 tbsp Milk powder
  • 1 tbsp Sesame seeds
  • 1 Egg yolk

Directions

Step 1

In a mixing bowl, combine 150g of all-purpose flour, 60g of butter, and 40g of powdered sugar. Mix until the texture resembles coarse crumbs. Gradually add 60ml of water and knead into a smooth dough. Cover and let rest for 20 minutes. This will be the water dough.

Step 2

In a separate bowl, mix the remaining 100g of all-purpose flour with 30g of butter to form a soft, pliable dough. This will be the oil dough. Cover and let rest for 20 minutes.

Step 3

To make the winter melon filling, heat a pan over medium heat and add the grated cooked winter melon, 100g of sugar, 25g of glutinous rice flour, 1 tbsp oil, and 2 tbsp of milk powder. Stir continuously until the mixture thickens and forms a smooth paste. Let it cool completely.

Step 4

Preheat the oven to 180°C (356°F) and line a baking sheet with parchment paper.

Step 5

Divide both the water dough and oil dough into 12 equal portions. Flatten a piece of water dough, place a piece of oil dough in the center, and wrap the water dough around it. Roll it out into an oval shape, then roll it up like a jelly roll. Repeat this process for all portions and rest for 10 minutes.

Step 6

Roll out each dough portion again into a circle. Place a small ball of winter melon filling in the center. Wrap the dough around the filling, pinching to seal the edges. Gently flatten the filled pastry with your hand to form a disc shape.

Step 7

Place the discs onto the prepared baking sheet. Brush the tops with egg yolk and sprinkle with sesame seeds.

Step 8

Bake in the preheated oven for 20-25 minutes, or until the pastries are golden brown and flaky.
