  • 1 tablespoon rice vinegar
  • 2 tablespoons hoisin sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon sambal oelek or chili garlic sauce
  • 1 teaspoon sugar
  • 1 cup julienned carrots
  • 1 bell pepper, thinly sliced
  • 2 cups baby spinach
  • 2 tablespoons crushed peanuts (optional)
  • 2 tablespoons cilantro leaves (optional)

Directions

Step 1

Cook the noodles according to the package instructions. Drain and rinse them under cold water, then toss with a teaspoon of sesame oil to prevent sticking. Set aside.

Heat the vegetable oil in a large skillet or wok over medium heat.
