Ingredients

  • 450 grams boneless, skinless chicken thighs
  • 3 tablespoons soy sauce

  • 3 tablespoons vegetable oil
  • 8 pieces dried red chilies
  • 3 cloves garlic cloves, minced
  • 1 teaspoon fresh ginger, minced
  • 3 stalks scallions, chopped
  • 60 grams unsalted peanuts
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sugar
  • 1 teaspoon sesame oil
  • 2 tablespoons water
  • 1 medium-sized red bell pepper, diced
  • 1 small zucchini, diced

Directions

Step 1

Cut the chicken thighs into bite-sized cubes and place them in a small bowl.

Step 2

In the bowl with the chicken, add 3 tablespoons of soy sauce and 2 teaspoons of cornstarch. Mix well to coat and set aside to marinate for 10 minutes.

Step 3

In a small bowl, mix the sauce ingredients: 2 tablespoons of low-sodium soy sauce, 1 tablespoon of rice vinegar, 1 tablespoon of hoisin sauce, 1 teaspoon of sugar, 1 teaspoon of sesame oil, and 2 tablespoons of water. Set the sauce aside.
