Ingredients

  • 4 cups Day-old cooked white rice
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Sesame oil
  • 2 large Eggs
  • 1 cup Frozen peas and carrots
  • 3 stalks Green onions, sliced
  • 3 tablespoons Soy sauce
  • 1 tablespoon Oyster sauce (optional)
  • 1 cup Cooked protein (e.g., diced chicken, shrimp, or tofu)
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Prepare the rice a day in advance or use leftover rice. The grains should be dry and slightly firm to avoid clumping during the stir-fry process.

Step 2

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Step 3

In a small bowl, whisk the eggs lightly. Pour the eggs into the skillet and scramble them until fully cooked. Remove the scrambled eggs and set aside.

Step 4

Add the remaining tablespoon of vegetable oil and the sesame oil to the skillet. Toss in the frozen peas and carrots and stir-fry for 2-3 minutes until they are heated through.

Step 5

Add the cooked protein (if using) to the skillet and cook for an additional 2 minutes, stirring occasionally.

Step 6

Turn the heat to high and add the day-old rice to the skillet. Break up any clumps with a spatula or wooden spoon and stir-fry for 5 minutes, ensuring all the rice is evenly heated.

Step 7

Drizzle the soy sauce and oyster sauce (if using) over the rice, stirring well to evenly distribute the sauces throughout the dish.

Step 8

Stir in the scrambled eggs and sliced green onions. Cook for another 1-2 minutes while stirring continuously.

Step 9

Season with salt and black pepper to taste.

Step 10

Serve hot and enjoy your homemade Chinese Take-Out Fried Rice!
