Ingredients

  • 200 grams adzuki beans (red beans)
  • 2000 milliliters water
  • 80 grams rock sugar (or regular granulated sugar)
  • 1 piece dried tangerine peel
  • 30 grams sweet glutinous rice (optional for creaminess)

Directions

Step 1

Rinse the adzuki beans under cold running water until the water runs clear. Soak them in a bowl of water for at least 4 hours or overnight to soften.

Step 2

If using sweet glutinous rice, rinse and soak it in a separate bowl of water for 30 minutes before cooking.

Step 3

Drain and rinse the soaked adzuki beans. Add them to a large pot along with 2000 milliliters of water.

Step 4

Bring the pot to a boil over high heat, then reduce to low heat and simmer for 60 minutes, stirring occasionally to prevent sticking.

Step 5

Add the dried tangerine peel to the pot and continue simmering for another 20 minutes to infuse its aromatic flavor into the soup.

If using sweet glutinous rice, drain it and add it to the pot at this point. Let it cook for 10 minutes until the rice becomes soft and translucent.
