Prepare the spareribs by cutting them into individual ribs and trimming off excess fat if needed. Rinse under cold water and pat dry with paper towels.
In a large mixing bowl, whisk together hoisin sauce, soy sauce, honey, Chinese five-spice powder, minced garlic, grated ginger, rice vinegar, and sesame oil to create the marinade.
Place the spareribs in a large resealable plastic bag or a shallow dish. Pour the marinade over the ribs, making sure they are evenly coated. Seal the bag or cover the dish with plastic wrap, and refrigerate for at least 2 hours or up to overnight for best flavor.
Preheat the oven to 300°F (150°C). Line a baking sheet with aluminum foil and place a wire rack on top.
Remove the spareribs from the marinade and let excess marinade drip off. Reserve the remaining marinade for later use.
Arrange the ribs in a single layer on the wire rack. Cover the baking sheet with foil and bake in the preheated oven for 2 hours, turning the ribs halfway through the cooking time.
While the ribs are baking, pour the reserved marinade into a small saucepan. Add 1/4 cup of water and bring to a gentle simmer over medium heat.
In a small bowl, mix the cornstarch with an additional tablespoon of water to create a slurry. Stir the slurry into the simmering marinade and cook until the sauce thickens. Remove from heat and set aside.
After 2 hours, remove the foil covering the ribs. Increase the oven temperature to 425°F (220°C) and brush the thickened sauce generously over the ribs.
Return the ribs to the oven, uncovered, and bake for an additional 15-20 minutes, or until the ribs are caramelized and slightly charred at the edges.
Remove from the oven and let the ribs rest for 5 minutes before serving. Garnish with sliced green onions and sesame seeds, if desired. Serve warm.
