Ingredients

  • 4 cups Cooked rice (preferably day-old)
  • 2 tablespoons Vegetable oil
  • 2 Eggs
  • 1 cup Carrots, diced
  • 1 cup Frozen peas
  • 3 Spring onions, sliced (white and green parts separated)
  • 2 cloves Garlic, minced
  • 3 tablespoons Soy sauce
  • 1 tablespoon Oyster sauce (optional)
  • 1 teaspoon Sesame oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper

Directions

Step 1

Heat 1 tablespoon of vegetable oil in a large non-stick skillet or wok over medium-high heat.

Step 2

Beat the eggs in a bowl, then pour them into the skillet. Scramble the eggs until cooked through, breaking them into small pieces. Remove from the skillet and set aside.

Step 3

Add the remaining 1 tablespoon of vegetable oil to the same skillet. Once hot, add the diced carrots and cook for 2-3 minutes until slightly softened.

Step 4

Add the minced garlic, white parts of the spring onions, and frozen peas. Stir-fry for an additional 2 minutes until fragrant and the peas are heated through.

Step 5

Increase the heat to high and add the cooked rice to the skillet. Use a spatula to break up any clumps of rice and mix thoroughly with the vegetables.
