Ingredients

  • 200 grams Chicken breast
  • 150 grams Broccoli florets
  • 1 medium Bell pepper (red or yellow, sliced)
  • 2 tablespoons Soy sauce
  • 1 tablespoon Sesame oil
  • 2 cloves Garlic (minced)
  • 1 teaspoon Ginger (grated)
  • 1 teaspoon Cornstarch
  • 2 tablespoons Water
  • 1 pinch Salt
  • 1 pinch Black pepper
  • 2 cups Cooked rice or noodles
  • 2 tablespoons Green onions (sliced, for garnish)
  • 1 teaspoon Sesame seeds (optional, for garnish)

Directions

Step 1

Cut the chicken breast into bite-sized pieces and place them in a microwave-safe bowl.

Step 2

Add the soy sauce, sesame oil, minced garlic, grated ginger, salt, and black pepper to the chicken. Mix well and let marinate for 5 minutes while preparing the vegetables.

Step 3

Chop the broccoli florets and slice the bell pepper into thin strips.

Step 4

Add the vegetables to the bowl with the marinated chicken. Stir to combine.

Step 5

In a small bowl, mix cornstarch and water to create a slurry. Pour the slurry into the chicken and vegetable mixture. Stir to coat everything evenly.

Step 6

Cover the microwave-safe bowl with microwave-safe plastic wrap or a microwave-safe lid. Make sure to leave a small vent for steam to escape.

Step 7

Microwave on high for 5 minutes. Carefully remove the cover (beware of steam) and stir the mixture to ensure even cooking.

Step 8

Return the bowl to the microwave and cook for another 2-3 minutes, or until the chicken is fully cooked and the vegetables are tender-crisp.

Step 9

Remove the bowl from the microwave and give the mixture a final stir. Taste and adjust seasoning if needed.

Step 10

Serve the Chinese Stir Microwave over cooked rice or noodles. Garnish with sliced green onions and sesame seeds, if desired.
