Ingredients

  • 450 grams shrimp (peeled and deveined)

  • 1 tablespoon oyster sauce
  • 1.5 tablespoons Shaoxing wine (or dry sherry)
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • 2 teaspoons cornstarch
  • 3 tablespoons water (divided)
  • 1 teaspoon ginger (finely minced)
  • 2 cloves garlic (finely minced)
  • 2 tablespoons vegetable oil
  • 0.25 teaspoon white pepper (optional, for seasoning)

Directions

Step 1

Rinse the shrimp under cold water and pat them dry with paper towels. Place them in a bowl and toss with 1 teaspoon of cornstarch and 1 tablespoon of water. Let marinate for 10 minutes.

Step 2

In a small bowl, combine soy sauce, oyster sauce, Shaoxing wine, sugar, sesame oil, and the remaining 1 teaspoon of cornstarch with 2 tablespoons of water. Mix well to create the sauce.

Heat a large wok or skillet over medium-high heat. Add 1 tablespoon of vegetable oil and swirl to coat the pan.
