Cut the pork shoulder or pork butt into long, thick strips approximately 2-3 inches wide. Pat the pork strips dry with a paper towel.
In a large bowl, combine hoisin sauce, soy sauce, oyster sauce, honey, brown sugar, Shaoxing wine, sesame oil, five-spice powder, minced garlic, and optional red food coloring to form the marinade.
Place the pork strips into the marinade and ensure they are fully coated. Cover the bowl with plastic wrap and refrigerate for at least 4 hours or overnight for maximum flavor.
