Ingredients

  • 1 cup Jasmine rice
  • 6 cups Chicken stock
  • 1 inch Ginger
  • 3 stalks Scallions
  • 1 medium Carrot
  • 2 tablespoons Soy sauce
  • 1 teaspoon Sesame oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon White pepper
  • 1 cup Cooked chicken (optional)
  • 2 tablespoons Fresh cilantro (optional)

Directions

Step 1

Rinse the jasmine rice thoroughly under cold running water until the water runs clear. Set aside.

Step 2

Peel the ginger and slice it into thin slices. Chop the scallions, separating the white and green parts. Finely dice the carrot.

Step 3

In a medium-sized pot, bring the chicken stock to a boil over medium-high heat.

Step 4

Add the rinsed rice, ginger slices, white parts of the scallions, and diced carrots to the boiling stock. Stir well.

Step 5

Reduce the heat to low, cover the pot with a lid, and let the soup simmer gently for 30-35 minutes. Stir occasionally to ensure the rice doesn't stick to the bottom of the pot.

Step 6

Once the rice is tender and the soup has thickened slightly, stir in the soy sauce, sesame oil, salt, and white pepper. Adjust the seasoning to taste.
