Break up the cooked, day-old rice into small clumps using your hands or a fork to remove any lumps.
Heat 1 tablespoon of vegetable oil in a large, nonstick skillet or wok over medium-high heat.
Crack and whisk the eggs in a small bowl, then pour them into the hot skillet. Scramble the eggs until just set, breaking them into small pieces. Remove the eggs from the skillet and set them aside.
Add the remaining 2 tablespoons of vegetable oil to the skillet. Once hot, add the diced carrot and cook for 2-3 minutes, stirring occasionally, until slightly softened.
Add the garlic and cook for an additional 30 seconds, stirring constantly, until aromatic.
Add the frozen peas to the skillet and stir, cooking for another 1-2 minutes until heated through.
Push the vegetables to one side of the skillet and add the rice to the other side. Spread the rice out so it can heat evenly, then toss it with the vegetables using a spatula.
Reduce the heat to medium, and drizzle the soy sauce, oyster sauce, and sesame oil over the rice. Stir well to coat every grain of rice with the sauces.
Add the cooked eggs back into the skillet, along with the sliced green onions. Gently fold everything together until evenly mixed.
Season with salt and black pepper to taste, and stir once more to distribute the seasoning.
Serve the fried rice immediately, garnished with additional sliced green onions if desired.
