Ingredients

  • 4 medium potatoes
  • 2 garlic cloves
  • 2 stalks green onions
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon chili oil
  • 1 teaspoon sesame oil
  • 0.5 teaspoon salt
  • 0.5 teaspoon sugar
  • 0.5 teaspoon crushed red pepper flakes
  • 1 teaspoon sesame seeds
  • 4 cups cold water

Directions

Step 1

Peel the potatoes and rinse them under cold water. Slice the potatoes into very thin strips, about the thickness of matchsticks.

Step 2

Fill a large bowl with 4 cups of cold water, and add the potato strips to the bowl to prevent them from oxidizing and turning brown.

Step 3

Bring a pot of water to a boil over medium heat. Add a pinch of salt, and then blanch the potato strips for 1-2 minutes, or until they are just slightly tender but remain crisp.

Immediately drain the potatoes and transfer them to a bowl of ice water to stop the cooking process. Let them sit in the ice water for 2-3 minutes, then drain thoroughly and set aside.
