Ingredients

  • 500 grams pork loin
  • 10 medium shallots
  • 3 tablespoons soy sauce
  • 1.5 tablespoons oyster sauce
  • 1 teaspoon dark soy sauce
  • 2 teaspoons sugar
  • 1.5 tablespoons cornstarch
  • 3 tablespoons water
  • 1 inch ginger
  • 4 large garlic cloves
  • 2 tablespoons vegetable oil
  • 1 teaspoon sesame oil
  • 2 stalks scallions (optional, for garnish)

Directions

Step 1

Thinly slice the pork loin into bite-sized strips. Place the pork in a mixing bowl and marinate with 1 tablespoon of soy sauce, 1 tablespoon of cornstarch, and 1 tablespoon of water. Set aside for 10 minutes.

Step 2

Peel and slice the shallots into thin rings. Mince the garlic and ginger finely.

Step 3

In a small bowl, mix 2 tablespoons of soy sauce, oyster sauce, dark soy sauce, sugar, 1/2 tablespoon of cornstarch, and 2 tablespoons of water. Stir well to create the sauce and set aside.

Step 4

Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat. Add the marinated pork and stir-fry for 3–4 minutes until the pork is lightly browned and cooked through. Remove the pork from the wok and set aside.

Step 5

Add the remaining 1 tablespoon of vegetable oil to the wok. Toss in the minced garlic and ginger, and stir-fry for 30 seconds until fragrant.

Step 6

Add the sliced shallots to the wok and stir-fry for 2–3 minutes until they begin to soften.

Step 7

Return the cooked pork to the wok and pour in the prepared sauce. Stir everything together and cook for an additional 2–3 minutes, allowing the flavors to meld and the sauce to thicken.

Step 8

Drizzle the sesame oil over the dish and give it a final mix. Remove from heat.

Step 9

Garnish with sliced scallions if desired and serve hot with steamed rice.
