Ingredients

  • 450 grams Pork loin or tenderloin
  • 3 tablespoons Soy sauce
  • 2 tablespoons Oyster sauce
  • 1 teaspoon Sesame oil
  • 1 tablespoon Cornstarch
  • 2 tablespoons Vegetable oil
  • 3 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 1 medium Carrot, julienned
  • 1 medium Red bell pepper, sliced
  • 200 grams Broccoli florets
  • 100 grams Snap peas
  • 3 stalks Scallions, sliced
  • 3 tablespoons Chicken broth
  • 1 teaspoon Sugar
  • 0.5 teaspoon White pepper (optional)
  • 4 cups Cooked white rice or noodles (for serving)

Directions

Step 1

Slice the pork loin or tenderloin thinly against the grain into bite-sized pieces.

Step 2

In a small bowl, combine 1 tablespoon soy sauce, 1 teaspoon sesame oil, and 1 tablespoon cornstarch to make a marinade. Toss the pork slices in the marinade and let it sit for 10 minutes.

Step 3

Prepare the sauce in a separate bowl by mixing 2 tablespoons soy sauce, 2 tablespoons oyster sauce, 3 tablespoons chicken broth, 1 teaspoon sugar, and 0.5 teaspoon white pepper (optional). Set aside.

Step 4

Heat 1 tablespoon vegetable oil in a large wok or skillet over medium-high heat. Add the marinated pork and stir fry for 3-4 minutes until just cooked through. Remove from the pan and set aside.

Step 5

Add the remaining 1 tablespoon vegetable oil to the wok. Add minced garlic and ginger, stir frying for 30 seconds until fragrant.

Step 6

Add the carrot, red bell pepper, and broccoli florets to the wok. Stir fry for 3-4 minutes, then add the snap peas and cook for an additional 2 minutes or until the vegetables are tender-crisp.

Step 7

Return the cooked pork to the wok and toss with the vegetables.

Step 8

Pour the prepared sauce into the wok and stir well to coat the pork and vegetables evenly. Cook for 1-2 minutes until the sauce thickens slightly.

Step 9

Garnish the stir fry with sliced scallions and serve hot over cooked white rice or noodles.
