Ingredients

  • 500 grams Ground pork or chicken
  • 3 stalks Green onions, finely chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Ginger, grated
  • 2 tablespoons Soy sauce
  • 1 tablespoon Oyster sauce
  • 1 tablespoon Shaoxing wine or dry sherry
  • 1 teaspoon Sesame oil
  • 1 teaspoon Sugar
  • 1 teaspoon Cornstarch
  • 1 pinch White pepper
  • 20 pieces Spring roll wrappers (large)
  • 500 milliliters Vegetable oil (for frying)
  • 1 large Egg (for sealing wrappers)

Directions

Step 1

In a large mixing bowl, combine the ground pork or chicken with green onions, garlic, ginger, soy sauce, oyster sauce, Shaoxing wine, sesame oil, sugar, cornstarch, and white pepper. Mix thoroughly until well-combined.

Step 2

Lay a spring roll wrapper on a flat surface with one corner pointing toward you to form a diamond shape.

Step 3

Place 2 tablespoons of the meat filling in the center of the wrapper. Shape the filling into a small log, leaving enough space at the edges for folding.

Step 4

Fold the bottom corner of the wrapper over the filling, tucking it snugly. Fold in the left and right corners to enclose the filling. Roll the wrapper tightly toward the top corner, ensuring the roll is sealed.

Step 5

Brush the top corner of the wrapper with beaten egg to seal the roll. Repeat with the remaining filling and wrappers.

Step 6

Heat the vegetable oil in a deep frying pan or wok over medium heat until it reaches 180°C (350°F). Test by dipping a wooden chopstick into the oil—bubbles should form around it.

Step 7

Carefully place a few rolls into the hot oil, ensuring not to overcrowd the pan. Fry for 3–4 minutes, turning occasionally, until golden brown and crispy.

Step 8

Remove the rolls from the oil with a slotted spoon and drain on a plate lined with paper towels. Repeat with the remaining rolls.

Step 9

Serve the crispy rolls hot with your favorite dipping sauce, such as sweet chili sauce or soy-based dipping sauce.
