  • 1.5 lbs chicken breasts (boneless, skinless)

  • 2 tbsp hoisin sauce

  • 3 tbsp barbecue sauce
  • 1 tbsp rice vinegar
  • 3 cloves garlic (minced)
  • 1 tsp ginger (grated)
  • 0.5 tsp red pepper flakes (optional, for heat)
  • 2 green onions (sliced thinly)
  • 1 tbsp sesame seeds (optional, for garnish)
  • 4 cups cooked white rice (for serving)

Directions

Step 1

Cut the chicken breasts into bite-sized cubes and toss them in a bowl with the cornstarch until evenly coated.

Step 2

In a large pan or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add the cashews and toast them for 2-3 minutes until golden and fragrant. Remove and set aside.
