Ingredients

  • 150 grams shiitake mushrooms
  • 150 grams oyster mushrooms
  • 100 grams enoki mushrooms
  • 1 thumb-sized piece, thinly sliced ginger
  • 4 cloves, minced garlic
  • 4 stalks, finely chopped green onions
  • 4 tablespoons soy sauce
  • 2 teaspoons sesame oil
  • 6 cups vegetable broth
  • 200 grams dried Chinese noodles
  • 2 small heads, chopped bok choy
  • 0.5 teaspoons white pepper
  • 1 teaspoon (or to taste) salt
  • 2 tablespoons, chopped (optional for garnish) cilantro

Directions

Step 1

Clean all mushrooms thoroughly. Slice the shiitake and oyster mushrooms into bite-sized pieces, leaving the enoki mushrooms whole.

Step 2

In a large pot, heat the sesame oil over medium heat. Add ginger and garlic, sautéing until fragrant, about 1-2 minutes.

Step 3

Add the sliced shiitake and oyster mushrooms to the pot. Sauté for 5 minutes until they soften and release their juices.

Step 4

Pour in the vegetable broth, soy sauce, and white pepper. Bring the mixture to a boil, then reduce the heat to a simmer.

Step 5

Add the dried Chinese noodles to the pot and cook for 3-5 minutes, or according to the package instructions, until tender.

Step 6

Add the bok choy and enoki mushrooms to the pot. Cook for an additional 2-3 minutes until the bok choy is tender but still bright green.

Step 7

Taste the soup and adjust seasoning with salt if needed.

Step 8

Ladle the soup into bowls. Garnish with chopped green onions and cilantro if desired. Serve hot.
