Ingredients

  • 4 cups cooked jasmine rice
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 large carrot, diced
  • 1 cup frozen peas
  • 6 pieces shiitake mushrooms, sliced
  • 3 stalks green onions, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 2 eggs, beaten
  • 2 links cooked Chinese sausage, sliced (optional)
  • 0.5 teaspoon salt
  • 0.25 teaspoon white pepper

Directions

Step 1

Begin by preparing all the ingredients. Dice the carrot, slice the shiitake mushrooms and green onions, and mince the garlic and ginger.

Step 2

Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat.

Step 3

Pour the beaten eggs into the wok and scramble them until cooked. Remove the eggs from the wok and set them aside.

Step 4

Add the remaining 1 tablespoon of vegetable oil to the wok. Stir-fry the minced garlic and ginger until fragrant, about 30 seconds.

Step 5

Add the diced carrot, frozen peas, and shiitake mushrooms to the wok. Stir-fry for 3-4 minutes, or until the vegetables are tender.

Step 6

Push the vegetables to one side of the wok and add the cooked rice to the other side. Use a spatula to break up any clumps of rice.

Step 7

Drizzle the soy sauce, oyster sauce, sesame oil, salt, and white pepper over the rice. Mix well to combine the sauces evenly.

Step 8

Add the cooked scrambled eggs, sliced green onions, and Chinese sausage (if using) to the wok. Toss everything together until heated through.

Step 9

Taste and adjust seasoning if necessary. Serve immediately and enjoy your festive Chinese New Year Rice!
