Ingredients

  • 200 grams All-purpose flour
  • 100 grams Ground almonds
  • 100 grams Granulated sugar
  • 150 grams Unsalted butter, softened
  • 2 pieces Egg yolks
  • 1 teaspoon Almond extract
  • 0.25 teaspoons Salt
  • 0.5 teaspoons Baking powder
  • 1 portion Egg wash (egg yolk mixed with 1 teaspoon water)
  • 40 pieces Whole almonds (for topping)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2

In a medium bowl, whisk together the all-purpose flour, ground almonds, salt, and baking powder. Set aside.

Step 3

In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.

Step 4

Add the egg yolks and almond extract to the butter-sugar mixture, and mix until well combined.

Step 5

Gradually add the dry ingredients to the wet mixture, mixing until the dough comes together. Do not overmix.

Step 6

Scoop out about 1 tablespoon of dough per cookie and roll it into a ball. Place the balls onto the prepared baking sheets, spacing them about 2 inches apart.

Step 7

Gently flatten each dough ball slightly into a disc using your palm or the back of a spoon.

Step 8

Brush the top of each cookie with the egg wash, then press a whole almond into the center of each cookie.

Step 9

Bake in the preheated oven for 12-15 minutes, or until the cookies are lightly golden around the edges.

Step 10

Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 11

Serve and enjoy! Store the almond cookies in an airtight container for up to 1 week.
