Ingredients

  • 200 grams button mushrooms
  • 100 grams shiitake mushrooms
  • 100 grams oyster mushrooms
  • 3 cloves garlic
  • 1 teaspoon ginger
  • 2 tablespoons sesame oil
  • 2 tablespoons light soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • 1 teaspoon cornstarch
  • 2 tablespoons cold water
  • 2 stalks scallions (green onions)
  • 1 teaspoon white sesame seeds
  • 1 tablespoon cooking oil

Directions

Step 1

Clean the mushrooms thoroughly to remove any dirt. Pat them dry with a clean kitchen towel. Slice the button mushrooms and shiitake mushrooms into thick pieces. Tear the oyster mushrooms into bite-sized strips.

Step 2

Mince the garlic. Peel and finely grate the ginger. Chop the scallions into thin slices and separate the white and green parts.

Step 3

In a small bowl, mix the light soy sauce, dark soy sauce, oyster sauce, and sugar. Set aside.

Step 4

In another small bowl, dissolve the cornstarch in cold water to create a slurry. Set this aside for later thickening.

Step 5

Heat a wok or large skillet over medium heat. Add the sesame oil and cooking oil. Swirl the oil to coat the surface evenly.

Step 6

Once the oil is shimmering, add the minced garlic, grated ginger, and the white parts of the scallions. Stir-fry for 30 seconds until fragrant.

Step 7

Increase the heat to medium-high and add the mushrooms to the wok. Stir-fry for 4–5 minutes until the mushrooms soften and release their moisture.

Step 8

Pour the prepared soy sauce mixture over the mushrooms. Stir well to coat evenly. Let it simmer for 1–2 minutes.

Step 9

Give the cornstarch slurry a quick stir and gradually add it to the wok. Stir constantly for 1 minute as the sauce thickens and glazes the mushrooms.

Step 10

Remove the wok from heat. Sprinkle the green parts of the scallions and sesame seeds over the dish.

Step 11

Transfer the mushrooms to a serving plate, garnish as desired, and serve warm as a side dish or accompaniment to steamed rice or noodles.
