Ingredients

  • 400 g Chinese long noodles (or lo mein noodles)
  • 2 tbsp Vegetable oil
  • 3 Garlic cloves, minced
  • 1 tbsp Ginger, finely grated
  • 1 Carrot, julienned
  • 1 Red bell pepper, thinly sliced
  • 150 g Shiitake mushrooms, sliced
  • 200 g Baby bok choy, chopped
  • 3 tbsp Soy sauce
  • 2 tbsp Oyster sauce
  • 1 tbsp Dark soy sauce (optional, for color)
  • 1 tsp Sesame oil
  • 1 tsp Sugar
  • 0.5 tsp White pepper
  • 3 Green onions, sliced
  • 1 tbsp Sesame seeds (optional, for garnish)

Directions

Step 1

Bring a large pot of water to boil and cook the noodles according to the package instructions. They should be tender but not mushy. Drain, rinse with cold water, and set aside.

Step 2

In a small bowl, combine soy sauce, oyster sauce, dark soy sauce (if using), sesame oil, sugar, and white pepper. Stir until the sugar is dissolved and set the sauce mixture aside.

Step 3

Heat a wok or large skillet over medium-high heat. Add the vegetable oil.

Once the oil is hot, add the minced garlic and grated ginger. Stir-fry for 30 seconds until fragrant.

Step 5

Add the julienned carrot, sliced red bell pepper, and shiitake mushrooms. Stir-fry for 2-3 minutes until the vegetables begin to soften.

Add the chopped baby bok choy and stir-fry for another 2 minutes until wilted.

Add the cooked noodles to the wok and pour the sauce mixture over the top.

Toss everything together using tongs or chopsticks to evenly coat the noodles in the sauce. Cook for another 2-3 minutes until the noodles are heated through.

Remove from heat and sprinkle with sliced green onions and sesame seeds (if using).
