Ingredients

  • 12 ounces Lo Mein noodles

  • 1 teaspoon Sesame oil
  • 1 teaspoon Ginger (freshly grated)
  • 3 cloves Garlic (minced)
  • 1 tablespoon Brown sugar
  • 1 cup Water
  • 2 tablespoons Vegetable oil
  • 1 medium Carrot (julienned or thinly sliced)
  • 1 medium Bell pepper (thinly sliced)
  • 1 cup Broccoli florets
  • 1 cup Snow peas (trimmed)
  • 2 stalks Scallions (sliced, green parts only)
  • 2 tablespoons Crushed peanuts (optional, for garnish)

Directions

Step 1

Bring a large pot of water to a boil. Add the Lo Mein noodles and cook according to the package instructions. Drain and rinse with cold water to prevent sticking. Set aside.

Step 2

In a medium bowl, whisk together the soy sauce, peanut butter, hoisin sauce, rice vinegar, sesame oil, grated ginger, minced garlic, brown sugar, and water until smooth. Set the peanut butter sauce aside.

Heat the vegetable oil in a large skillet or wok over medium-high heat.
