Heat a large skillet or wok over medium heat and add 1 tablespoon of vegetable oil.
In a medium bowl, lightly beat the egg and pour it into the skillet. Scramble until cooked through, then set aside on a plate.
In the same skillet, add the remaining tablespoon of vegetable oil. Once heated, add the garlic and ginger, and sauté for 30 seconds until fragrant.
