Ingredients

  • 2 cups matzo farfel
  • 1 pound chicken breast, diced
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 3 stalks scallions, sliced
  • 1 cup carrots, julienned
  • 1 cup snow peas, trimmed
  • 1 large egg, beaten
  • 3 tablespoons tamari or Passover-friendly soy sauce
  • 1 teaspoon sesame oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Heat a large skillet or wok over medium heat and add 1 tablespoon of vegetable oil.

Step 2

In a medium bowl, lightly beat the egg and pour it into the skillet. Scramble until cooked through, then set aside on a plate.

Step 3

In the same skillet, add the remaining tablespoon of vegetable oil. Once heated, add the garlic and ginger, and sauté for 30 seconds until fragrant.

Step 4

Add the diced chicken breast to the skillet and cook for 5-7 minutes, stirring occasionally, until fully cooked and lightly browned. Remove from the skillet and set aside.

Step 5

Add the carrots, snow peas, and scallions to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.

Step 6

Return the cooked chicken and scrambled egg to the skillet and mix with the vegetables.

Step 7

Add the matzo farfel to the skillet, breaking up any large clumps. Stir well to combine all ingredients.

Step 8

Drizzle tamari (or Passover-friendly soy sauce) and sesame oil over the mixture. Add salt and black pepper, and toss everything until evenly coated.

Step 9

Cook for another 2-3 minutes, stirring occasionally, until the matzo farfel is heated through and slightly crisp.

Step 10

Serve immediately and enjoy your Passover-inspired fusion stir fry!
