Ingredients

  • 1 pound boneless, skinless chicken thighs
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 cup cornstarch
  • 0.5 cup all-purpose flour
  • 2 large eggs
  • 4 cups vegetable oil
  • 0.25 cup granulated sugar
  • 2 tablespoons hoisin sauce
  • 2 tablespoons ketchup
  • 0.5 cup chicken broth
  • 2 garlic cloves, minced
  • 2 green onions, chopped (optional for garnish)
  • 0.5 teaspoon red pepper flakes
  • 1 teaspoon sesame seeds (optional for garnish)

Directions

Step 1

Cut the chicken thighs into bite-sized pieces and place them in a medium-sized bowl. Add 2 tablespoons of soy sauce and 1 tablespoon of rice vinegar. Mix well and let marinate for 10–15 minutes.

Step 2

In a separate bowl, whisk together the eggs. In another shallow dish, combine the cornstarch and flour.

Step 3

Heat the vegetable oil in a large, deep skillet or wok over medium-high heat until it reaches 350°F (175°C).

Step 4

Coat the chicken pieces first in the egg, then dredge them in the cornstarch-flour mixture, pressing lightly to ensure an even coating.

Step 5

Fry the coated chicken pieces in batches for 4–5 minutes or until golden brown and fully cooked. Remove and place on a paper towel-lined plate to drain excess oil.

Step 6

In a small saucepan, combine the granulated sugar, hoisin sauce, ketchup, chicken broth, minced garlic, and red pepper flakes. Cook over medium heat, stirring continuously, until the sauce thickens, about 3–5 minutes.

Step 7

Add the fried chicken pieces to the sauce and toss until they are evenly coated.

Step 8

Serve immediately over steamed rice or with your choice of side. Garnish with chopped green onions and sesame seeds, if desired.
