Directions

Step 1

Wash, peel, and dice the potatoes into small cubes (about 1/2 inch). Finely chop the onion and garlic cloves, mince the ginger, and dice the red bell pepper. Slice the green onions thinly and set them aside for garnish.

Step 2

Heat a large skillet or wok over medium-high heat and add 1 tablespoon of vegetable oil. Add the diced potatoes and sauté for 5-7 minutes, stirring often, until they start to turn golden brown. Remove the potatoes from the skillet and set them aside.
