Ingredients

  • 1 pound fresh green beans
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon honey
  • 2 cloves fresh garlic, finely minced
  • 1 teaspoon fresh ginger, finely grated
  • 1 tablespoon sesame seeds, toasted
  • 0.25 teaspoon red pepper flakes (optional, for heat)

Directions

Step 1

Trim the ends of the green beans and rinse them thoroughly under cold water.

Step 2

Bring a large pot of salted water to a boil. Add the green beans and cook for 3-4 minutes until tender but still crisp and bright green.

Step 3

Immediately transfer the green beans to a bowl of ice water to stop the cooking process. Let them cool for 2-3 minutes, then drain and pat dry with a clean towel.

Step 4

In a small mixing bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, minced garlic, and grated ginger until well combined. If you prefer some heat, add the red pepper flakes at this stage.

Step 5

Place the cooled green beans in a large serving bowl. Pour the dressing over the beans and toss until evenly coated.

Step 6

Sprinkle the toasted sesame seeds over the top of the salad as garnish.

Step 7

Serve immediately, or allow the salad to marinate in the refrigerator for 30 minutes to enhance the flavors before serving.
