Ingredients

  • 4 large eggs
  • 100 grams gai lan (Chinese broccoli)
  • 100 grams shiitake mushrooms (fresh or rehydrated)
  • 2 cloves garlic
  • 1 tablespoon soy sauce
  • 0.5 teaspoon sesame oil
  • 1 tablespoon vegetable oil
  • 0.25 teaspoon salt
  • 0.25 teaspoon ground white pepper
  • 1 stalk scallions (optional, for garnish)

Directions

Step 1

Wash the gai lan thoroughly, then separate the leaves from the stems. Slice the stems into thin pieces and roughly chop the leaves.

Step 2

Clean the shiitake mushrooms and slice them thinly. Mince the garlic cloves.

Step 3

In a small bowl, beat the eggs with soy sauce, sesame oil, salt, and white pepper until fully combined.

Heat 1/2 tablespoon of vegetable oil in a non-stick skillet over medium heat. Add the garlic and sauté until fragrant, about 30 seconds.

Add the gai lan stems and mushrooms to the skillet, cooking for 2-3 minutes until they begin to soften. Then, stir in the gai lan leaves and cook for another 2 minutes until wilted. Remove the mixture from the skillet and set aside.
