  • 1.5 pounds Pork spareribs
  • 3 tablespoons Soy sauce
  • 2 tablespoons Shaoxing wine (or dry sherry)
  • 1 tablespoon Dark soy sauce
  • 2 tablespoons Brown sugar
  • 1 tablespoon Honey
  • 3 Garlic cloves, minced
  • 1 inch Ginger, thinly sliced
  • 2 Star anise
  • 1 Cinnamon stick
  • 1 Red chili (optional, for heat)
  • 2 cups Water
  • 1 teaspoon Sesame oil
  • 2 Scallions, sliced (for garnish)
  • 1 teaspoon Sesame seeds (for garnish)

Directions

Step 1

Rinse the pork spareribs under cold water and pat them dry with paper towels. Cut them into 2-3 inch pieces.

Step 2

In a large pot of boiling water, blanch the spareribs for 5 minutes. This will remove impurities and improve the final flavor. Drain and set aside.

Step 3

In a large skillet or wok, heat the sesame oil over medium heat. Add the minced garlic, ginger slices, star anise, cinnamon stick, and red chili (if using). Stir-fry for 1-2 minutes until fragrant.

Add the blanched spareribs to the skillet and cook for 3-4 minutes, turning occasionally, until lightly browned on all sides.

Pour in the soy sauce, Shaoxing wine, dark soy sauce, and water. Add the brown sugar and honey to the mixture. Stir to combine, ensuring the ribs are evenly coated in the sauce.

Bring the mixture to a boil, then reduce the heat to low. Cover the skillet with a lid and simmer for 1 hour, stirring occasionally. If the sauce reduces too much, add a little more water.

After 1 hour, remove the lid and increase the heat to medium-high to allow the sauce to thicken and coat the ribs. Stir frequently to prevent burning.

Once the sauce has reduced to a sticky glaze and clings to the ribs, remove the skillet from the heat.

Garnish the spareribs with sliced scallions and sesame seeds. Serve hot with steamed rice or your favorite side dishes.
