Wash and dry the string beans thoroughly. Trim the ends off and cut them into 2- to 3-inch pieces.
Heat 2 tablespoons of vegetable oil in a large wok or skillet over medium-high heat. Add the string beans and stir-fry for 5-6 minutes, or until they develop wrinkles and begin turning golden brown. Remove the beans from the wok and set them aside on a plate.
In the same wok, add the remaining 1 tablespoon of vegetable oil. If using ground pork, add it now and cook for 2-3 minutes, stirring frequently, until browned and cooked through.
Add the minced garlic, minced ginger, scallions, dried red chilies, and Sichuan peppercorns (if using) to the wok. Stir-fry for 30 seconds until fragrant.
Return the cooked string beans to the wok and toss to combine them with the aromatics.
In a small bowl, whisk together the soy sauce, Shaoxing wine, oyster sauce, and sugar. Pour this sauce over the green beans and stir well to coat all the ingredients evenly. Cook for another 1-2 minutes, allowing the flavors to meld.
Drizzle the toasted sesame oil over the string beans, give them a final toss, and remove the wok from heat.
Serve immediately as a side dish or over steamed rice as a main dish. Enjoy!
