Ingredients

  • 500 grams large fresh prawns
  • 150 ml Shaoxing wine
  • 500 ml water
  • 10 grams ginger, thinly sliced
  • 2 stalks green onions, cut into 3 cm sections
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 teaspoon sugar
  • 1 teaspoon sesame oil
  • 1 teaspoon salt
  • 0.5 teaspoon white pepper

Directions

Step 1

Rinse the prawns thoroughly under running water. If desired, trim the sharp ends of the shells and devein, leaving the heads and shells intact for added flavor.

Step 2

In a large bowl, combine the prawns with 100 ml of Shaoxing wine and let marinate for 10 minutes.

Step 3

In a wok or medium-sized pot, bring 500 ml of water to a boil. Add the ginger, garlic, and green onions, and allow them to simmer for 3 minutes to infuse the liquid.

Stir in the remaining 50 ml of Shaoxing wine, soy sauce, sugar, salt, and white pepper. Let the mixture simmer for another 2 minutes.

Add the marinated prawns to the boiling liquid and cook for 3–5 minutes, or until they turn bright orange and are cooked through. Be careful not to overcook as this can make the prawns rubbery.
