Ingredients

  • 8 pieces Dried figs
  • 2 whole Fresh apples (such as Fuji or Gala)
  • 50 grams Sweet almonds (peeled)
  • 10 grams Bitter almonds (optional, peeled)
  • 30 grams Rock sugar (adjust to taste)
  • 1.5 liters Water

Directions

Step 1

Rinse the dried figs thoroughly under cool water to remove any impurities. Set aside.

Step 2

Peel, core, and cut the apples into large chunks (about 6-8 pieces per apple).

Step 3

Rinse the sweet and bitter almonds under cool water.

Step 4

In a large pot, add the water and bring it to a boil over medium-high heat.

Step 5

Once the water is boiling, add the dried figs, apple chunks, sweet almonds, and bitter almonds (if using). Reduce the heat to low to maintain a gentle simmer.

Step 6

Cover the pot with a lid, leaving a small gap to prevent boiling over, and allow the soup to simmer for 70-80 minutes.

Step 7

After cooking, add the rock sugar to the pot. Stir until the sugar dissolves completely. Taste and adjust sweetness to your preference.

Step 8

Turn off the heat and let the soup cool slightly. Serve warm or at room temperature. This soup can also be chilled and enjoyed cold as a refreshing dessert.
