Ingredients

  • 300 g egg noodles
  • 250 g boneless chicken breast
  • 3 tbsp soy sauce
  • 1 tbsp cornstarch
  • 3 tbsp vegetable oil
  • 3 pcs garlic cloves
  • 1 tbsp ginger
  • 2 pcs red chilies
  • 1 pcs bell peppers
  • 1 pcs carrot
  • 3 stalks spring onions
  • 2 tbsp dark soy sauce
  • 3 tbsp Szechuan sauce
  • 1 tsp sesame oil
  • 0.5 tsp white pepper
  • 1 tbsp sesame seeds

Directions

Step 1

Cook the egg noodles as per the package instructions. Drain, rinse with cold water, and set aside.

Step 2

Slice the chicken breast thinly and marinate with 1 tbsp soy sauce and cornstarch for 10 minutes.

Step 3

Heat 2 tbsp vegetable oil in a wok or large skillet over high heat. Add the marinated chicken and stir-fry until golden and cooked through, about 3-4 minutes. Remove and set aside.

Step 4

Finely mince the garlic and ginger. Thinly slice the red chilies, bell peppers, and carrot. Chop the spring onions, keeping the white and green parts separate.

Step 5

In the same wok, add the remaining 1 tbsp vegetable oil. Sauté garlic, ginger, and red chilies until fragrant, about 30 seconds.

Step 6

Add the white parts of the spring onions, bell peppers, and carrot. Stir-fry for 2-3 minutes until slightly tender but still crunchy.

Step 7

Return the cooked chicken to the wok. Stir in the dark soy sauce, Szechuan sauce, sesame oil, and remaining 2 tbsp soy sauce. Mix well for 1 minute.

Step 8

Add the cooked noodles and toss everything together until well combined and evenly coated. Sprinkle white pepper and adjust seasonings as needed.

Step 9

Garnish with chopped green parts of the spring onions and sesame seeds. Serve hot and enjoy your spicy, flavorful Chinese Dragon dish.
