  • 500 grams beef (stew meat or chuck, cut into cubes)
  • 500 grams potatoes (peeled and cut into large chunks)
  • 1 medium onion (diced)
  • 1 tablespoon ginger (minced)
  • 2 cloves garlic (minced)
  • 1 large carrot (peeled and sliced into chunks)
  • 2 tablespoons vegetable oil
  • 1 tablespoon curry powder
  • 2 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 500 milliliters beef stock (or water)
  • 1 tablespoon cornstarch
  • 2 tablespoons water (for cornstarch slurry)
  • 1 teaspoon sugar
  • 0.5 teaspoon salt
  • 2 stalks green onions (for garnish, chopped)

Directions

Step 1

Heat the vegetable oil in a large pot or deep skillet over medium-high heat.

Step 2

Add the beef cubes and sear until browned on all sides. Remove and set aside.

Step 3

In the same pot, add the diced onion, minced ginger, and minced garlic. Sauté until fragrant and the onion turns translucent, about 3-4 minutes.

Stir in the curry powder and cook for 30 seconds to release its aroma.
