Ingredients

  • 4 large Bell peppers (any color)
  • 500 grams Ground chicken
  • 1 tablespoon Ginger, minced
  • 2 cloves Garlic, minced
  • 3 tablespoons Soy sauce
  • 1 tablespoon Hoisin sauce
  • 1 teaspoon Sesame oil
  • 2 stalks Green onions, thinly sliced
  • 1 cup Cooked rice (optional, for extra filling)
  • 1 teaspoon Cornstarch
  • 2 tablespoons Water
  • 1 tablespoon Vegetable oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a baking dish.

Step 2

Slice the tops off the bell peppers and remove the seeds and membranes. If needed, trim the bottoms slightly so they stand upright. Set aside.

Step 3

In a large skillet, heat the vegetable oil over medium heat. Add the minced ginger and garlic, cooking for 1-2 minutes until fragrant.

Step 4

Add the ground chicken to the skillet, breaking it up with a spoon as it cooks. Cook for 5-6 minutes until no longer pink.
